Black Ant Egg Cake: Every year around April and May, the Tay ethnic people in Cao Bang province go to the forest to find black ant eggs to make Black Ant Egg Cakes (known in Tay language as pẻng rày). The cake is made from glutinous rice flour, black ant eggs, and young leaves of vả tree. Black ant eggs in Cao Bang forest are very sticky, fat, and high in protein.

Cao Bang’s 7-Flavor Roast Duck: Unlike regular duck dishes, making Cao Bang’s 7-Flavor Roast Duck requires careful selection of ducks. The grass duck cannot be used, and a duck that is too large or too fatty is also eliminated. A duck that is just right, with firm meat, shiny feathers, and weighs about 1.8-2 kg is cleaned, gutted, and carefully dipped in boiling water to tighten the meat.

Cao Bang Trám Sticky Rice: Trám sticky rice is made from carefully selected glutinous rice and trám fruit. After being soaked in warm water, the trám fruit is mixed with the pre-cooked sticky rice to create a beautiful purple color. The taste is sure to please any visitor.

Khao Cake: Khao Cake is a traditional cake that is never absent from the ancestor worship altar. Khao Cake is actually a kind of dry food of the Tày and Nùng people, which can be eaten for a whole month without getting moldy or spoiling. With the tradition of welcoming the Lunar New Year in the first month of spring, as long as there is Khao Cake in the house, it is still considered New Year.
